Wild-caught in Louisiana in the Gulf of Mexico.

Cobia’s flesh is very firm and flaky, and tastes similar to tuna or mahi-mahi. This white meat fish is often described as having a fresh, clean and buttery flavor, often with a faint hint of lemon. It’s never oily. Cobia is a white fish with large flakes.

How to prepare:  grill, blacken, stovetop, bake, saute, fry, broil, marinate, boil, poach, smoke, steam
