Seafood Pie
serves 6 to 8
1 pound shrimp or crabmeat
3/4 cup butter
3/4 cup bell pepper, chopped
1 lg. Onion
1/2 cup green onion, chopped
4 tbsp tomato paste
1 can cream of mushroom soup
1 cup cooked rice
2 deep dish pie crust
Shredded cheese
Sauté bell pepper, onion and green onions in butter until tender, add seafood of choice and simmer 10 minutes. Mix with soup, rice and tomato paste; pour mixture into pie crust. Top layer with cheese. Place the top pie crust on pie. Preheat oven to 450º, cook pie for 10 minutes then lower oven to 375º and cook for 35 minutes longer or until pie crust is golden brown. Instead of shrimp or crabmeat, you can use whatever your favorite seafood is.
