Mediterranean Seafood Skewers

4-6 servings

8 10-inch Wooden skewers

1-1/2 to 2 lbs. Fish fillets and/or shrimp

24 Bay leaves

Salt to taste

3/4 c. Extra-virgin olive oil

1/4 c. Fresh lemon juice

8 to 10 Garlic cloves, chopped

1/4 c. Parsley

Soak the wooden skewers in warm water for 10 minutes. Cut the fish into 24 equal-sized cubes. Thread the cubes and shrimp alternately with bay leaves, onto the skewer. Salt the seafood on all sides. Whisk together 1/4 cup olive oil and lemon juice and brush over skewered fish and shrimp. Grill over hot coals until fish and shrimp is cooked, rotating and brushing as necessary. Meanwhile, combine the remaining olive oil, garlic and parsley. Pass the garlic olive oil with skewers. Bon appétit!
