Croatian Shrimp Buzara

4-6 servings

3 lbs. Shrimp, medium or large

1/2 c. Olive oil

1 can Diced tomatoes, drained

6 Garlic cloves, minced

1 Onion, chopped fine

Small bunch of Parsley

1/3 c. Breadcrumbs

3 c. White wine

Salt and pepper to taste

Lemon (optional)

Pour yourself a glass of wine. In a large skillet, add oil and heat. Then add onions and sauté for 1 or 2 minutes, then add garlic and sauté a couple more minutes. Add tomatoes and parsley. Season with salt and pepper and bring to a brief simmer. Add shrimp, breadcrumbs and the rest of the wine into the pan. Stir and cook until the shrimp are done, about 5 minutes.
