​Crabmeat Au Gratin

Entree, 6 servings

1/4 cup chopped bell peppers

1/2 cup finely chopped celery

1/4 cup minced garlic

1/2 cup margarine or butter

6 tbsp flour

1 (5 ounce) can evaporated milk

2 egg yolks, well beaten

1/4 cup grated American cheese

1/8 cup grated parmesan cheese

1/4 tsp salt

1/4 tsp black pepper

Dash red papper

Dash paprika

3 cups lump crab meat

1/3 cup chopped parsley

Preheat oven to 350º. In a skillet, sauté veggies in margarine or butter; slowly stir in flour. Slowly stir in milk and egg yolks. Add cheese; melt over low heat, stirring often. Add seasonings; carefully stir in crab meat and parsley. Put mixture in casserole dish; bake uncovered until hot and bubbly.
