Dalmatian Brudet

4 servings

2 lbs. mixed Seafood: Fish (cubed), shrimp (peeled) and/or Oysters

3 Tbsp. Olive oil

1 large Onion, finely chopped

5 Garlic cloves, minced

1/4 c. Parsley, chopped

1 Tsp. Thyme

Pinch of Cayenne pepper

1 (28 oz.) can Diced tomatoes

3 Tbsp. Red wine vinegar

1 c. Red or white wine

1-1/2 Tsp. Sugar

Salt and pepper to taste

In a large pan over medium heat, sauté the onion in the olive oil until the onion is very soft and translucent, about 15 minutes. Add the garlic and stir for an additional 2 minutes. Stir in the parsley, thyme, cayenne, tomatoes, red wine vinegar, wine, sugar, salt and pepper and simmer for another 20 minutes. Gently add the seafoods stirring to coat each piece with the tomato sauce. Simmer gently, stirring occasionally, for 8 - 10 minutes or until seafood is cooked. Serve with polenta or crusty bread and enjoy!
