Broiled Oysters
2 to 4 servings
Double the recipe for a main dish
1 stick butter
1 cup chopped parsley
1 tsp dried chervil or tarragon
1 tsp black pepper
Salt to taste
Lemon juice
Tabasco
1 pint oysters, drained
1 loaf French bread, sliced, buttered and toasted
Set oven to broil. In a saucepan, melt butter. Add parsley, chervil, pepper, salt, lemon juice and tabasco to taste and mix well. Place oysters in flat pan and cover with butter mixture; place under broiler until oyster edges curl, about 2 to 3 minutes. Serve on hot, buttered, toasted French bread.
